With a Basque background, and a self-taught marvel, Chef Inaki began his cooking career at Café des Delices under Laurent Chareau and pursued it at La Famille in Montmartre, where he first won acclaim for his creative cooking, before he joined Le Transversal in the Mac/Val modern arts museum in Vitry-sur-Seine, where Laurent Chareau invited him to re-unite their talents.

Inaki purchased a historic bistro near Belleville and renamed it Le Chateaubriand. It was an instant hit, with its immediate success underscored domestically by being declared the Le Fooding guide’s Best Restaurant in 2007. Global recognition came with the title of “Breakthrough Restaurant” in the annual revered poll “The S.Pellegrino World’s 50 Best Restaurant” in 2009. It has been listed there ever since and ranked 15th Best Restaurant in its 2012 edition.
